The County of Yolo is currently recruiting for one regular, full-timeposition in the Food Services Coordinator class at the Yolo County Sheriff-Coroner-Public Administrator's Office.Theincumbent in this position will work at the Monroe Detention Center located in Woodland, CA. The ideal candidate for this position will have experience working in an institutional or commercial kitchen performing duties such as meal planning, meal preparation,purchasing, and/or staff supervision. Candidates with this type of experience in a correctional setting arepreferable, buta professional background in a correctional setting is not required. In addition to the duties listed in the job description below, the selected candidate will be responsible for the indirect and/or direct supervision of lower level classification inmates.

Under general direction, the incumbent plans, supervises, coordinates and participates in food preparation meal service in a correctional settings; supervises the activities of cooks; engages in quantity buying; and performs other related duties as required.

Distinguishing Characteristics
This class is distinguished from the Supervising Cook by additional administrative responsibility in the operation of the correctional facilities jail kitchens including the minimum security jail, and Juvenile Hall; of purchasing food products, selecting vendors, equipment and supplies; and budget responsibilities for the County jail kitchens.

Essential Functions

  • Develops nutritional meals providing the minimum daily requirements from menus which ensure a variety of items and takes advantage of seasonal food offerings;
  • Prepares and monitors the budget for corrections food service which includes the main jail and the minimum security jail;
  • Orders food products from vendors including meats, produced, dry goods, dairy, and other supplies;
  • Signs receipts for goods and verifies quantity and prices;
  • Maintains an adequate inventory for goods and verifies quantity and prices;
  • Maintains an adequate inventory level to meet daily and unforeseen demands;
  • Prepares and maintains financial, accounting, and other necessary records and reports;
  • Maintains daily records of meals served and food costs;
  • Maintains work schedules;
  • Maintains continuing cost controls of food costs;
  • Assures that the standards of safety and sanitation are met in the facilities, and equipment and building is maintained in good operating order, develops special diets upon request of a physician and supervises the preparation of these special diets;
  • Selects, trains, oversees, and evaluates staff and supervises functions relating to the food services operation;
  • Meets with local, state and federal health agency inspectors, supervises the receiving and storage of all food supplies;
  • and performs other duties as may be required.
Employment Standards

Education: High School Diploma or G.E.D. Certificate.

License: Some positions in this classification may require incumbents to possess and maintain a valid California driver's license, Class C or higher, to carry out job related duties. Knowledge of: principles of supervision and employee training; nutritional and dietary standards for institutional foods; techniques and methods for purchasing and preparing food in large quantities; inventory control; county budget and budgetary control; equipment and utensils used in preparation, cooking and serving of food; food storage methods, meal planning and preparation, kitchen sanitation and maintenance; food quality and values as well as nutritional and economical substitutions within food groups; weights and measures used in cooking; special diets; safety precautions for kitchen equipment; Health Department standards for food establishment; health and safety regulations; departmental policies and procedures.

Ability to: plan and coordinate the work of food service staff including jail trustees; plan and develop menus consistent with nutritional requirements; maintain daily records of foodstuffs; order sufficient level of supplies to meet requirements in the most economical manner; organize work to meet meal schedules; maintain records and prepare reports and estimates; perform simple mathematical computations including addition, subtraction, division, multiplication, and percentages; read, write, and follow directions; operate and maintain all kitchen equipment; cook and bake, evaluate, and establish goals and objectives for staff; communicate clearly and concisely, both orally and in writing; work cooperatively with those contacted in the course of work.
